Bismarck colors
Bismarck colors in the Anatomy of the Ship book are,
Mid grey (RAL 7000) for main hull
Dark grey (RAL 7024) for fore and aft parts of hull
Light grey (RAL 7001) for superstructure
Red brown (RAL 8013) for underwater keel
But are this the real German navy colors?

Those seem to be the standard German navy colours of the time. Try this chart:

I believed that RAL numbers were just the equivalent of the original color used but not the real color.

Yes, used by the Kriegsmarine Shipyard in Wilhelmshaven circa 1944 and reproduced in Dieter Jung, Arno Abendroth, and Norbert Kelling, "Anstrich und Tarnanstriche der deutchen Kriegsmarine," Bernard & Graefe Verlag, Bonn, 1997

For the most part, white for the inner surfaces of the armour , bulkheads, and light grey (RAL 7001) or Elfenbein (RAL9003) for equipment, if I recall. Also dark grey for flooring.

So what kind of shell do each of those colors (red, blue, and yellow) represent?

I might be mistaken, but just off the top of my head, red was practice, yellow was nose fuzed and base fuzed HE, and blue was armour-piercing.
