Help with WW2 U boat story

My Grandad was in the RN in WW2 and one of his old stories was that during the end of the war he was in the English channel when his ship was attacked by a u boat. Thankfully the torpedo missed, but his ship gave chase the U boat exploded. I have tried to find out ship namea etc to no avail i believe he may have been on HMS Hastings. Any help would be appreciated , i know its a long shot !

There is a website which I believe did plot the daily positions of most U-boats. If you know the date and position of the ship concerned, try looking up the U-boats in that area.
